Cotes du Rhone Clavin Rouge 2014Produced on fairly stony, aired and deep soils, it is dominated by old Grenache, in a place called Clavin. According to the year the Clavin is supplemented by 20-30% Syrah and old Mourvedre. Like the Chateauneuf du Pape, after an entirely by hand done harvest and two sortings ( the first in parcelle and the second in cellar), only healthy and ripe grapes are vinified. Balance being established in the parcelle, the grapes are vinified with out any external contribution ( sulfit, tartaric acid...) and exclusively with indigenous yeast. The temperature is controlled during fermentation, over-extraction is not required. At the end of the fermentation draining is done by gravity directly into the foudre, after malolactic fermentation the elevation will continue during one year. After single sulfiting the wines will be bottled without fining or filtration. The Cotes-du-Rhone initiates ideally to the style of the estate.

Cotes du Rhone Clavin Blanc 2015Produced in a very small
quantity (two to three thousand bottles) resulting from
traditional varieties of the appellation and dominated by our
Grenache of Clavin. To these beautiful Grenache are added
Clairette, Bourboulenc and Marsanne. After an entirely by hand
done harvest and two sortings ( the first in parcelle and the
second in cellar), only healthy and ripe grapes are vinified.
Balance being established in the parcelle, the grapes are
vinified with out any external contribution ( sulfit, tartaric
acid...) and exclusively with indigenous yeast. The
temperature is controlled during fermentation. The wine-making
process and the aging are done exclusively in tanks. After a
single sulfiting the wines will be bottled with out fining or
filtration. The wine-making process allows us to let the
malolactic fermentation process occur naturally, this is
something started back in 2003.
