Grape Variety: 90% Semillon and 10% Sauvignon Soil: Silt and Clay-sand Growing Methods: Rigorous canopy management, sustainable agriculture, respect of the fruit and environment.Thinning of shoots to prevent overcrowding of vegetation, removal of late ripening bunches at the start of veraison ( when the grapes change color) Aging: Five weeks on the lees then bottled Tasting notes: Bright light yellow color, this wine has a very harmonious nose. Initially there are exotic and citrus aromas, with floral notes. On the palate the wine is soft, pleasant and well balanced. From the start it is dominated by a rounded, fruity style. This wine is ready to drink now and will improve for at least another two years, during which the aromatic palette will broaden with the citrus notes typical of Semillon. Growing Methods: Rigorous canopy management, sustainable agriculture, respect of the fruit and environment.Thinning of shoots to prevent overcrowding of vegetation, removal of late ripening bunches at the start of veraison ( when the grapes change color) Aging: Aged in Vats for 12 months Tasting notes: Bright cherry in color. The nose has good intensity with aromas of roasted meat, developing notes of red fruit and spices on aeration. The fresh, lively palate is characterized by fresh fruit, predominantly strawberries. Very soft tannins contribute to an expression of classic Bordeaux style with the emphasis on balance and aromatic finesse. Pairing: piperade, tortillas, red meat (lamb, mutton, beef) and white meat (poultry, game) a selection of cheeses (cantal, goats, sheep and cows milk cheeses) Serve: 15 to 17c |
